It’s been a while since I’ve meal planned, but gosh I’ve missed it! It makes me accountable, it makes me think more about what we already have in the cupboards and freezer and such it means we waste less food. Oh, and we’ve had so many days, especially when I’ve been at work and I have hastily reached for the nearest edible thing (we had crisps and apples the other week).

Monday – Rice and lentils. I’ve posted about this before and now it has become a Monday night staple as Betsy gets ready for her gymnastics class. Tonight we had this with a hard boiled egg and broccoli.
Tuesday – Slowcooked pumpkin and chickpea curry, because it’s halloween, obviously. But chances are the kiddos will just be eating sweets.
Wednesday – Cheese omelette and peas
Thursday – Fish fingers and beans
Friday – Aubergine with lentils and basil. This recipie comes from Nigel Slater’s new book, The Christmas Chronicles. I am LOVING this book. I’d argue that it’s less about Christmas and more about eating well throughout winter. It’s a comforting book and I can’t stop reading it and I’m going to have to try everything in there.

  1. Hi Charlotte, I’m a sort of meal planner, but couldn’t go as far as to plan a week of meals in advance. I tend to think about tomorrow and the next day and have an idea that next week I will cook such and such a meal, depending on what I’ve got in or when I plan to go shopping. I’m a big fan of pulses, legumes and rice. I don’t know what it is but I love the taste together. The curry sounds nice and the aubergine with lentils and basil sounds interesting…. At the moment I have the pressure cooking some dried beans to pop in the slow cooker for a chilli tonight.

  2. Your curry sounds delicious. I try to meal plan but I’m not too rigid with it. I think it is so much more efficient when you do plan ahead though. #mmbc

  3. I am absolutely TERRIBLE at meal planning …. but on the flip-side I am fairly good at preparing a meal from whatever I have to hand. And tonight – thanks to reading this post I think we are now having pumpkin and chickpea curry 🙂 Popping by from #MMBC and thank you for visiting my blog.
