First week in a while of some proper routine, so first week of a meal plan in a while too. The slow cooker is coming out of hibernation this week too – I will not want to cook when I’m back home from work! Also it’s packed lunches for me this week. I’m roasting off a head of cauliflower and a load of vegetables to have with some spinach and whatever else I can find in the fridge.
Monday – Mac and cheese. Special Betsy request. I swear whenever I write one of these meal plans, cheesy pasta is always featured, but we don’t have it that often, honest!
Tuesday – Chicken carnival curry from our trusty Ella’s Kitchen cookbook. Again, chosen by the Boo. Slow cooked.
Wednesday – Kicheree. This is being made after a conversation I saw on Facebook. Super simple and quick as long as I remember to soak the lentils the previous night.
Thursday – Spanish style potatoes with chorizo. Based on this.
Friday – Potato and parsnip cakes. Another recipe chosen by Betsy from Ella’s Kitchen. These cakes are topped with roasted beetroot and smoked salmon and have a dollop of sour cream on top. Sounds yum!
