Hahahahaha! I’m so funny! You see this post is about making some jam so I included a song that’s, well, not about making jam, actually*.
As I’ve mentioned before, I picked quite a lot of soft fruit a couple of weekends ago. The majority of the raspberries went straight into the freezer to be used at a later date. I’m not sure what yet, I’ll possibly make some jam, but not until I have finished eating this lovely strawberry jam I made with all the fruit from the PYO (after having a mass strawberries and cream extravaganza with some friends).
Yum. My jam didn’t set, so I’d follow Delia’s method here if I were you. I’m not sure what happened with mine, maybe I didn’t have enough pectin, maybe my jam didn’t quite reach the setting point. It’s still very tasty though.
I had a helper. And when I say helper, I mean someone shedding fur into the jam (it adds texture!) and hoping I start cooking meat pronto.
The most successful thing I made with my fruit though wasn’t a jam, but lollipops. It’s super simple and utterly delicious. All you need is sugar and fruit.
- 115g Sugar
- 500g Raspberries
- Juice of 1 lemon
Make a sugar syrup by boiling the sugar up with 115ml of water until the sugar is dissolved and then leave to cool. Pass the raspberries through a sieve to make a purée and to remove all the seeds. Add the sugar syrup and lemon juice to the purée and pour into lollipop moulds and pop into the freezer.
