So after a very relaxing half term of lots of long days and very simple meals, we’re back on track this week. I hope. Especially for me. I’ve been eating way too much crap recently and I’m sure that has something to do with the exhaustion I’ve been feeling recently. So alongside the meals below, it’s back to the lemon and ginger water in the mornings for me, breakfast smoothies again rather than the toast and marmalade I’ve been having (it is rather fine marmalade though), less coffee and less snacking. Or at least sensible snacking, like vegetables or popcorn.
Monday – Home-made fish fingers and sweetcorn dip. Potato wedges (pictured) ready to go in the oven too!
Tuesday – Ginger & turmeric chicken with roast squash and brown rice.
Wednesday – Prawn fajitas
Thursday – Turkey burgers and sweet potato fries
Friday – I’ll be at Blogtacular so Dave’s in charge. I think he was talking about taking the kids down to the fish and chip restaurant.
