Another week, another meal plan. I haven’t done a plan for a few weeks because quite frankly the winter blues got to me and I. Could. Not. Be. Arsed. But trying to get meals done last week was a trial, I missed not having that plan! This is weird for me. The last couple of meal plans I had included some recipes from a couple of my cookbooks. Firstly, the lachuman from the 5 O’Clock Apron was great and it was lovely making bread again, so good in fact I have made it again since. It’ll be made again soon too, I think. Smitten Kitchen’s spatchcock chicken was simple but a revelation – I’d never spatchocked before, but it was SO EASY! Plus you cook the potatoes underneath the bird and everything is done in 40 minutes. A week-night roast dinner! Oh, by the way, that orange mess up there? That’s some marmalade I made. It’s well nice! The picture does not so it justice…

Monday – Mac and cheese with broccoli. It’s under the grill as I type! The one meal where everything gets eaten.

Tuesday – It’s Dave’s birthday! Special dinner tonight – steak with dauphinoise potatoes, his favourite.

Wednesday – Slow cooker dhal. Lots of veggies in there and enough for my lunch the next day

Thursday – Steak and ale pies. Dave bought these home over the weekend and they need using up.

Friday – Prawn and salmon linguine.

  1. Tonight I’ll be doing some sort of Mexican style (veggie) sausage and black bean chilli to serve with rice and the leftover guacamole and salad from last night’s tacos!
