Well last week’s meal plan really didn’t go, well, to plan. I fell ill 🙁 I don’t get ill too often, and this was only a cold, but when I do, it always floors me and the need to do anything goes right out of the window. There were lots of soups and beans and chips last week. Opps. No matter, I am feeling much better now and it would be good to get back on track! It also means that this week’s meal plan isn’t that different to last week’s as everything is still in the freezer!. I have been making some awesome salads for work though and that cauliflower above is from one of them, recipe for that coming soon.
Monday Lahmacun, from Claire Thomson’s The Five O’Clock Apron. I am determined to make this! It’s a dish that ticks all the meal boxes for my families
Tuesday Slow-cooked BBQ brisket, served in wraps and with some red cabbage coleslaw
Wednesday Mushroom and stilton tart, cooked on puff pastry.
Thursday A soup of some sort. Carrot, probably, Betsy is always asking for it!
Friday Spatchcooked roast chicken from the Smitten Kitchen cookbook. I have never spatchcooked a chicken before, so this is going to be interesting!
