Well gosh darn, once again it has been a while since I planned a week’s worth of dinner, but here we are, the first week with everyone at home for a while and for once I’m not too stressed to cook. Hooray! Tonight’s dinner is super simple as I’m still recovering from the holiday, quite frankly. Tomorrow we are out for the most of the day and so is quick and enjoyed by all. The rest of the week has been chosen by Betsy as she carefully leafed through her copy of Ella’s Kitchen Family Cookbook – I have mentioned that book so many times in this series, but it really is good and the design really appeals to the kiddos too, although Betsy did dismiss one meal because in the picture chopped spring onions were used as a garnish *eye roll*.

Monday – Frittata and peas
Tuesday – Vegetarian sausages and mash. I have only just discovered Linda McCartney’s frozen sausages, but goodness me they’re brilliant! As someone who wants to cut right back on the amount of meat they eat, these are fab as the kids happily eat them and they’re actually tasty. I have yet to try them on Dave who is a carnivore through and through, though.
Wednesday – Chicken and quinoa burgers (From Ella’s Kitchen)
Thursday – Pork ribs and green bean salad with sesame seeds and an Asian style dressing (think ginger, garlic, soy sauce, rice vinegar, etc, etc..)
Friday – Vegetable filo pie. Another chosen by Boo from Ella’s Kitchen, this one looks amazing and contains squash, puy lentils, leeks and mushrooms.  I’m really excited to try it. We’ll see if the kids eat it though.
Saturday – Homemade pizza! They’re the best.
