Do you buy an awful lot of fruit only for it all to slowly rot in the fruit bowl? Me too. This is a quick and delicious way to use up any hard fruit that’s about to turn. You also need some butter and ready made pastry (you can make your own if you like, but I cheated and used some puff that I already had in the fridge).
Melt some butter in an oven proof frying pan until it’s hot and bubbling and add your fruit.
Once the pears are cooked through and caramalised, add anything else that takes your fancy, like strwberries or blackberries or nothing at all to keep it simple. I popped in a couple of spoons of my homemade mincemeat to the mixture. Cut a circle of pastry out and place onto the fruit in the pan. Make sure there are a couple of holes in the middle to let steam out.
Put into the oven at around 175°C until the pastry is cooked.
The tricky bit is turning the whole thing out on a plate and keeping it in one piece! Best eaten warm and with a dollop of creme fraiche.
