Another week, another meal plan. Last week was tasty, Hungamama’s lentils were lovely and I have some left over too, it’s another recipe to add to my list of things to make for lunch, not so much for the others as they’re a bit pickier, especially Dave. Might try it with puy lentils next time as they’re a bit meatier in texture. This week we are feeling the pinch a bit as pay day isn’t until next week (come on, Tuesday!), so it’s an explore and see what we have in the cupboards today. Luckily, the supplies in the freezer are yet to get too sparse…

Monday The kids are currently munching on crudités and hummus and later on I’ll make banana pancakes as we have about four very squishy bananas! (I may make a banana loaf too)
Tuesday A take on the Hairy Biker’s polenta pork. Rather than sausages, I’ll use sausage meat from the freezer.
Wednesday Betsy has chosen mac and cheese (again) for this week but I have some roasted pumpkin puree (again, from the freezer) so that will go into the white sauce too along with the cheese, it’s such a good way to get more veg into dinners and is bloody nice too.
Thursday I’ve found some pizza dough in the freezer which is a nice surprise, so pizza for dinner!

  1. Hi Charlotte, I am always in awe of people that manage to plan their week’s meals. I can manage planning up to three days at a time and that’s about it. It is nice when you find something unexpected and handy in the freezer. That’s the one thing I like about sorting the freezer out.
